Ellen's Jambalaya

(adapted from the Frugal Gourmet)

 

Sauté (in oil or Pam):

Place the above in a large pot with:

Simmer one hour.

Sauté:

(Optional: Deglaze sausage pan with a bit of the broth, and add to large pot) Set the sausage aside.

Add to pot:

Simmer 20 minutes.

Sauté:

Add to pot:

Simmer 25 minutes (until rice is tender).
