Gina's Creamy Veggie Sauté


I made this up out of stuff I had around... Sauté onions, shiitake mushrooms, some other kind of mushroom (regular, crimini, portabella, whathaveyou), broccoli, eggplant or zucchini, asparagus and peas. Just toss them in the stir-fry as you get each ingredient chopped up (you don't have to chop the peas). Of course you can use whatever veggies you like, but the onions, shiitakes, and asparagus are the best. Add some seasonings as you go along, like tamari, pepper, basil, whatever. When it's just done, add a tub of Tofutti "Better Than Cream Cheese" (herbs and chives or plain), keep cooking and stirring until it's all mixed in. This is pretty rich so you can serve it with a grain or in pita bread or pastry cups. YUMM YUMM YUMM!
